OV SCOTLAND.

uncommon to find them very good beef before they are threeyears old; and with full feeding, there is perhaps no breedthat sooner attains maturity. 3. Their beef, like that of theHighland breed, is juicy, and well mixed with fat, and finein the grain.

Their aptitude to fatten prevents them perhaps fromreaching the weights of some other breeds. They do notgive much milk, but it is very rich. For the medium pas-tures of Scotland , they are not considered so profitable asthe West Highland breed, because they are reared uponbetter land, and are so much in request in Norfolk , as to sellalmost as high for droving, as they would do here when fat-tened.

The annexed table will' shew the relative proportions be-tween two Galloway cows, and two of the long and shorthorned breeds, in those points which arc considered of thegreatest importance. The comparison is said to have beenmade with great accuracy, and is inserted here rather for thepurpose of shewing the proportions of the Galloway breed, than with a view to the inferences that may have been drawnfrom it.
